# homemade raw & vegan cookies ..

Here it is finally, the famous “cookie” recipe that is 100% healthy and vegan…. I took some time to try and taste many versions but this is the one 😉 Hope you’re gonna like it as much as we do !

Ingredients for 13/14 cookies :

Healthy version : 

1 jar of hazelnuts + 1/2 jar of walnut + 1/2 jar of half cashew and half macadamia nuts => In fact you can do whatever mix you prefere, depending on what you have in your cupbard, as long as you respect the proportions, and have 2 jars of nuts)

1 jar of oats

1 tbsp of vanilla

1 tbsp of coconut oil

5 or 6 mashed dates, or 2 large tbsp of date paste.

1 half jar of soy or coconut milk (or vegetable milk of your choice)

=>for this recipe I use a small glass jar to measure the ingredients (125ML =1/2 cup =4 oz ) 

Chocolate version : 

=>Option 1 : 1 half jar of chocolate chips

=>Option 2 : Chocolate Coulis (my favorite) : you need 1 half pack of black, organic cooking chocolate (i take a very good chocolate from the french chef Alain Ducasse, it really does make a difference.. So choose a really good one ) +  chocolate soy milk (or vegetable milk of your choice)

Preparation:

Grill all nuts (almonds, walnuts, macadamia, cashew nuts, whatever you choosed) in the pan until they are golden brown. Leave to cool.(This stage is optional but personally I prefer the grilled nut version)

Mix up all the nuts together in the blender, (do not mix too much, we do not want a powder, but more of a mixture of medium sized bits, to keep the end product crunchy). Pour the mixture in a large bowl.

Add the oats, vanilla, dates, coconut oil and vegetable milk (and eventually the chocolate chips if you have chosen that option).. Rub together with your fingers to form a sort of paste, that is humid but not too sticky (if it is too sticky add some more oats or blended nuts) .

Roll into little balls and then make them into flat, round biscuit shapes (to flatten them you can also use the cookie cutter “stamps” in silicone, that can be found at Hema or online , they are perfect for this) Once you have made all your cookies (usually about 15) cover with cellophane, and put in the fridge or freezer for a few hours to harden.

Enjoy.. You can accompany these with a nice cup of tea after working out, or just for a healthy snack (1 or 2 cookies will do for an healthy snack ..)

Chocolate Version :

To make the cookies even more tasty, and if like me you are somewhat of a chocoholic, you will love this chocolate version 😉

Fill a pan with water and put on low heat. Break the chocolate into small pieces and place into a bowl. Place the bowl over the pan, and melt  the chocolate.

Add 1 tbsp of water and 2 tbsp of vegetable milk of your choice ( soy, chocolate, almond, nut etc) Do not cease stirring with a wooden spoon until you obtain a cream that is smooth. If the mixture is too thick you can add 1 or 2 spoons of vegetable milk to the cream.

Pour generously over each cookie. Place into the fridge or freezer and leave for several hours, for the chocolate to harden. Once the chocolate is solid enough, i use my stamp again to personalize the cookies 😉

These cookies will keep for 1 week in a Tupperware in the fridge. I think that actually you can keep them for 10 days, but I am unable to say, as in general, they disappear fairly quickly.
