- First of : pre heat the oven to 200 °c during the pizza preparation.
- The tomato sauce : personally I also prepare my tomato sauce beforehand too, as I leave it to stand whilst I do the rest… For the sauce you will need : 1 onion, 4 fresh tomatoes or 1 can of organic tomatoes, origano, salt & pepper, a pinch or 2 or red chili pepper, grated fresh garlic and 1 glass of water.. In a pot, cook the sliced onion in olive oil, when it’s getting nicely golden, add the sliced tomatoes (or the can of tomatoes), the salt, pepper and chili pepper, the grated garlic ,pour the glass of water, sprinkle the origin (fresh or dried). Cover and leave it to cook gently while you’re doing the pizza dough.. (don’t forget to stir from time to time)..
- For the dough itself, i used the pizza mix “ma vie sans gluten” /water/olive oil and the juice from one lemon, and all you need to do is follow the instructions. So mix everything together in a salad bowl, really mix well and make it into a ball shape (ensure that it is not too sticky)…
- Roll out : It is slightly tricky to roll out, as like with any other gluten-free doughs, they are much more fragile and delicate (and likely to split), but relax, breathe and do not panic, I have found the answer… in order to roll out the dough without it breaking, I sprinkle a little rice flour onto my work surface, and I also use my hands to roll it out first, making sure that the ball is patted down and flat using a circular motion with your hands. Add more rice flour to your work surface before rolling with the rolling-pin.
- Fold it in half and place it delicately onto your baking tray..
- Cook for 10 minutes at 200 degrees before adding your pizza toppings (tomato sauce, grilled tofu, tomato slices, black olives, grated cheese..).. Place back into the oven for a further 20/25 minutes and it is good to go!
- When it is finished cooking, add some fresh spinach or arugula leaves, (or even an egg and in this case, let it cook in the oven for a few more minutes, add the fresh leaves afterward 😉
Note : in this recipe, I used this gluten free mix “ma vie sans gluten” but if you can not find it in your regular organic shop, or online => here or here, i’m sure you can find something equivalent, any gluten free pizza mix will do, although I find this brand particularly good;) Fell free to share your tips and fav gluten free brands with us on a comment 😉
