Nubé is actually Marignan hotels restaurant.. that’s why we took advantage of our stay to discover the cuisine of this trendy place and meet its famous chef, the extremely talented Juan Arbaelez.. And as Valentine’s Day is coming, I wanted to share with you this fabulous french restaurant which would be just perfect for the occasion or if you stop by in Paris for a romantic city trip..
In a nutshell : Nubé is a cosy, lounge restaurant which breaks the traditional codes of many pompous and unaccessible French restaurants.. Its Colombian French head chef is a whiz kid when it comes to food and cooking, avant gardiste and so creative, he studied under the greatest chefs, and also got noticed on french hit TV show TopChef.. The waiters are dressed in a trendy but casual style, and the decoration is very intimate and relaxing with a 70’s revisited and contemporary style. Ah and the staff are absolutely adorable and very caring… This cosy and welcoming atmosphere makes you feel good immediatly.. Just settle down on a sofa or on a comfy chair and let’s get ready for dîner..
A colorful and innovative cuisine, using seasonal & local products, taken and cooked on sight.. Juan Arbaelez loves to break the codes and he is always inspired to create delicious, colorful, fun and avant gardiste meals with veggies, herbs and local products… We loved this place but also we completely fell under the spell of the chef, -a beautiful person, enthusiastic, generous, modern, with such a wonderful energy- and its way of cooking and of seing things is truly refreshing .. quite like him actually 😉
Vegetarians ? No problemo ! When he knew that we were vegetarian, Juan Arbaelez and his team downright revisited all of the menu into a veggie version.. They presented us with the new menu revised and corrected vegetarian style, and it was not 1 nor 2 dishes but a range of surprising dishes, the next one even more surprising than the previous one, and this continued all night long. A real explosion of tastes and colours just for us… Pictures coming soon…..
1/ Amuse bouche consisted of coconut milk and quinoa 2/ Spring starter (salad of asparagus with Espelette chili)
1/ First main : butternut squash and grilled little gem lettuce /
2/ second & third main a mixture of several dishes from the menu all vegan style of course
Healthy green dessert: 1/ celery in vanilla and lovage 2/ cooked apple in thyme, lemon, basil and spices..
In short : we absolutely loved this gastronomical experience which not only seduced us, but amazed and won us over as soon as we stepped in through the door, from the starter through to dessert!!!Here are the words that I jotted down in my notepad to summarize the meal: modern, surprising, creative, slightly acidic, sweet, salty, colorful cuisine, an explosion of flavors, innovative and fun.. I think that sums perfectly up the sensations which we experienced when discovering this new, original and reasonable cuisine, which associates perfectly different flavors and textures which we would never have imagined would go well together!
The bill: Nubés prices are completely correct and reasonable considering the area and the quality of the products. We can indulge ourselves without breaking the bank, with menus at 32 euros at lunch and between 60 and 80 euros in the evening.. And on the menu, starters are between 15 and 21 euros, mains between 24 and 30 euros, and the desserts are 15 euros… Brunch is 65 euros.
Special Valentine’s Day : Of course the chef came up with a special menu just for the occasion (approximately 80 euros without drinks) with champagne apéritif on the terrace with an amazing view of the Eiffel Tower… This menu contains meat & fish, but if you are vegetarian or vegan, do not hesitate to inform the team about it during your reservation;) And otherwise, Nubé is also perfect for brunch (yes we also tried and tested this and it is absolutely fabulous), lunch and of course dinner.. I absolutely recommend it!!
