
If you think salads are boring, then you need to try out this delicious recipe.. Colorful, exotic, healthy and easy to make, this slightly sweet and salty méli mélo salad is perfect for summer days.. I just love it !
Ingredients for 2 :
- 1/2 cucumber (washed and sliced)
- 1/2 ripe mango OR 1 nectarine
- 1 ripe avocado
- drizzle of olive oil
- 1 tbsp of light coconut cream
- 1 lemon juice (or even more if you like lemon )
- salt + pepper + 1 pinch or 2 of red chili pepper
- 1 washed and sliced shallot
- fresh minth or basil leaves (sliced)
Preparation :
- Slice the mango (or the nectarine), the cucumber and the avocado into small cubes.
- Season with salt & pepper and add the sliced shallot.
- Drizzle with the lemon juice and olive oil.
- Mix everything together (do it gently to preserve the delicates avocado and mango)
- Place the mix into bowls or plates and drizzle with the coconut cream and the pinch of chili pepper.
- Top with the basil or minth leaves..
>> Optionnal : You can add sprouts, oilseeds, sliced dried tomatoes, roasted nuts, fresh peas or fresh broad beans regarding the season, and even small cubes of steamed potatoes..
Et voilà ! Enjoy it chilled with some toasted bred, grissinis or crackers.
