Hello there <3
Here is a perfect recipe for vegetarians and vegans who are fans of good Bolognese, as well as meat eaters looking to try a new meat-free dish. 😉 The result is very much like the original version, except lighter and healthier – plus it’s really delicious! ^^
Ingredients:
For 2 large plates or 3 “normal” portions
- 200g of Taifun tofu (here)
- 1 onion + 2 cloves of garlic
- 1 pinch of chilli flakes or powder
- 1 can of organic tomato pulp (250g)
- 250 g of spaghetti, linguine or tagliatelle (fresh pasta, noodles or traditional pasta)
>> Gluten-free option: I try to reduce gluten in all of my recipes. For those with pasta, I use the brand Valpibio, which has great gluten-free products without eggs, like buckwheat linguine, brown rice tagliatelle, couscous and shell and spaghetti pasta. I love it and it’s a really great option for those who limit their gluten intake or are gluten intolerant. You can find all of their products at Green weez (here), as well as in some organic and Biocoop stores.

Preparation:
- In a mixing bowl, crumble the block of tofu and add one clove of – finely chopped or grated – garlic (I use a vegetable peeler for this).
- Chop the onion and the second garlic clove into small cubes and fry them in a pan with a little olive oil.
- Once the onion is a golden color, add the tofu to the pan. Leave to simmer on a low heat, stirring regularly until the tofu is cooked (this takes around twenty minutes).
- Once the tofu is a golden color, pour in the organic tomato pulp and a cup of water.
- Add the pinch of chilli, stir, cover and leave to simmer on a low heat for a good half hour.
- When the tomato sauce is almost ready, boil the pasta in water with salt. ^^ The gluten-free pastas take around 12 to 15 minutes to be al dente, so a little longer than traditional pasta.
- When the pasta is ready, I usually serve it into a dish before pouring the sauce over it. You can also add grated cheese, basil, nutmeg or a bit of oregano.
