Here is an easy peasy vegan & healthy snack recipe 😉 Those cookies are my fav at the moment, especially for breakfast or after work out .. I use choco chips but you can use cranberries, almonds, hazelnuts.. whatever you like.. You can even cut the dough in half to do different sorts.. (I usually do half choco chips and half roasted almonds cause Peter doesn’t like chocolate chips… and I do lol)
Ingredients (around 20 cookies )
- 120 g gluten free flour (mix C )
- 140 g oats (regular or instant )
- 50 g black chocolate chips or roasted hazelnuts / almonds chunks or even cranberries ..
- 50 g almonds or hazelnuts powder
- 1 tsp baking soda
- 1 pinch of himalayan salt
- 1 tsp cinnamon
- 90g unsweetened apple sauce
- 2 big tsp peanut butter (crunchy is better)
- 80g cold coconut oil
- 70 g mapple or agave syrup
Preparation :
Preheat the oven at 180°.
In a bowl, pour every dry ingredients (flour, oats, almond powder, cinnamon, baking powder). Mix with a wooden spoon.
Add the peanut butter, apple sauce and apple syrup. Stir and add coconut oil and chocolate chips . Mix together (I use my hands to knead the dough and form a ball. Form little balls and roll them in your hands. (I use a cookie cutter to flatten them & I smooth the sides with my fingertips)..
Place them on a baking tray cover with cooking paper or with a baking mat. Bake for 15 min .
Once cooked & cooled of, keep them in the fridge into an airtight container for a few days.
