# DIY pancakes healthy & easy & vegetarians .. mmmmh …

Good morning all!

Today I’m going to share with you, a quick and easy recipe that I simply love! Its great to prepare for a quick bite to eat, after a workout or for a brunch with friends…

A lot healthier and lighter that the original American version, this recipe allows you to indulge, but in a clean and balanced way. Try adding some fresh fruit for a splash of colour and a richer taste…

Ingredients :

– 1 or 2 mashed bananas.

– 2 table spoons of the flour of your choice : wheat, gluten free, coconut, chestnut etc…  For a flour less or paleo diet version , replace the flour with 2 large tablespoons of almond butter .

– 1 organic egg.

– optional : vanilla, cinnamon, cardamom etc …

– A spot of coconut oil or butter to grease the pan.

– A spatula and a pancake pan ( small is more practical for making these size pancakes )

 Toppings :

– Raspberries, strawberries, blueberries or any fresh fruit of your choice.

– Honey, maple syrup, golden syrup, apple compote, yoghurt etc

– Me, personally I love these with blueberries and maple syrup.

Let’s cook :

– Mix all the ingredients together.

– Preheat the pan, lightly greased with oil or butter.

– Cook for several minutes on each side, or until the pancake is a golden colour.

– Wipe any of the excess oil or butter off the pan in between each pancake.

–  Serve hot, fresh and with the toppings of your choice!
