Ingredients
– 1 natural greek yoghurt or for a light version, use a fat free yoghurt.
– 4 tbsp of olive oil.
– some lemon juice (I used lemon zest, instead of juice)
– 1 cucumber
– some fresh mint leaves (or basil or coriander)
– salt and pepper
Optional : ln the authentic tzazki there is crushed garlic, which you can also add to the preparation. Be careful with garlic, half a garlic clove will suffice. Anymore and the garlic overpowers the other flavours.
Préparation :
– Empty the yoghurt into the bowl.
– Peel and grate the cucumber (using a large grater, to create thick and regular circles.)
– Mix together the yoghurt and cucumber.
– Add the oilve oil, lemon zest, mint (finely chopped), salt and pepper and finally the crushed garlic.
– Mix together well and leave the rest in the fridge for a few hours before serving.
– Serve cold, as a main meal with warm bread or toast.(Personally I like to eat my tzazki with bread rolls) You can add more flavour to the tzazki by adding some chilli or indian spices. For an amuse bouche, serve with crudites and dips (carrots, cauliflower, cucumber, radishes etc)
